Beetroot Hummus

Ingredients

1 Beetroot
1 Can of chickpeas
1 Lemon, zest and juice
2 Cloves of garlic
2 Tablespoons tahini
60ml Brock & Morten natural rapeseed oil
Salt and pepper to taste.

Method

Blend the beetroot in a food processor until smooth. Add in the tin of chickpeas with a little of the water in the can along with the lemon juice and zest, garlic cloves, tahini and salt and pepper. Blend together and and slowly add the Brock & Morten natural rapeseed oil until smooth.

Serve in a bowl to use as a dip, or add to bruschetta or sandwiches.
